I love baking! Yeah I am 23 and I love baking and trying new recipes and cuisines. R love pears, so last week he bought some, well he bought a lot, so I got stuck with a fridge full of pears. I decided last night to make a delicious upside down pear cake and thought I would share the recipe with you guys.
All you need for this recipe are the following:
- 1/2 cup of butter, I really recommend using Low fat butter you save on the calories, fat and cholesterol but not on the taste and texture
- 1/4 cup of Honey
- 3 pears, peeled, quartered, cored and thinly sliced
- 1 cup of sugar
- 2 tbsp lemon juice
- 1 tsp grated lemon peel
- 2 eggs
- 1 cup all-purpose flour
- a pinch of dried thyme
- Cooking spray
- 1 tbsp of cinnamon
- 1 tbsp of liquid vanilla
As for the preparation it’s super easy. First of all start by heating the oven to 350 degrees. Then take 2 tablespoons of butter, honey and lemon juice and cook them in a non-stick skillet on a medium-high heat for about 4 minutes. Then add the pears, cinnamon and thyme,keep stirring them frequently. Cook them until golden. In the meantime spray a 9-inch nonstick cooking pan with the cooking spray. After they are done put the golden pears in it and set aside.
Now combine the lemon zest and sugar in a medium bowl mixing them with a wire whisk. Then add the eggs, vanilla and flour. Mix them well. Add the butter, you can microwave it for 15seconds to make it easier, and combine them well. Pour this mixture over the pears.
Put the cooking pan in the preheated oven for 35 minutes until it’s golden. After it’s done leave it out to cool for 10 minutes.
