This post is naughty… So, so naughty… These white chocolate macadamia cookies are out of this world!
I’d love to take credit for this recipe, but it’s actually one of R’s. He’s actually a fantastic cook. Although he’s more of the savory type, he absolutely nailed this recipe. He also bakes a mean mango cheesecake! I’ll save that recipe for another day!
If you’re human and like cookies you’re gonna absolutely fall in love with these! I’m warning you, they’re pretty addictive…
All you need is the following:
2 cups flour
1 cup brown sugar
1 egg beaten
1 cup butter
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1/2 cup macadamia nuts chopped
1/2 cup white chocolate chip
Bailey’s Irish Cream
Preheat the oven to 350F. Start by melting the butter, then add the sugar, vanilla extract and egg. Whisk the ingredients well.
In a separate bowl mix the flour, baking powder and salt. Slowly add the flour mix to the butter & sugar while continuously mixing. You should end up with a sticky dough. Sprinkle the white chocolate chip and the chopped macadamia nuts in and incorporate. Drop a fist sized ball into a greased small cast iron pan or baking tray. Put in the oven for about 15 minutes of until the top starts to get golden.
Once cooked, remove from the oven. Personally, R & I like the cookies hot right out of the oven. We top them with a scoop of ice cream and shot of Bailey’s… If you’re underage chocolate syrup is enough for you. They’re not the healthiest option, but for now let’s just believe that calories are imaginary (If only, right?!?)
