Fall and winter is all about warm comforting foods. One of my favorite warm & sweet breakfasts is this apple oatmeal recipe. Filled with rich apples, dried fruits, nuts and sprinkled with cinnamon, it’s a fall must!
There’s no better way to wake up on a cold day, then smelling the cooked apples and cinnamon fill the air. I know mornings can be busy, but why don’t you treat yourself on the weekend?
You’ll be needing:
Oats (steel cut or rolled, whatever you fancy)
Half an apple
1 teaspoon brown sugar
1/2 teaspoon margarine
1 teaspoon lemon or orange juice
1/4 dried fruits (I used raisins, cranberry and chopped dried figs)
1/4 chopped pecans
1/2 teaspoon cinnamon
Honey or maple syrup optional
Start by peeling and chopping the apple into cubes. In a pan, melt the margarine and the sugar. Add the apples and the dried fruits and coat them well. You can add a drop of water if you feel they’re too dry. Cook on medium heat until the apples become tender. Once cooked, squeeze a little lemon or orange juice and mix.
In the meantime, cook the oats to your liking. I usually cook them with milk to make them creamy. If you like your oats sweet, add honey or maple syrup to them. Add the apple and dried fruit mix to the oats, and mix them all together. Top them with the chopped pecans and cinnamon.
The warmth of the oats and cooked fruits, will warm up your tummy and soul. Sit back and enjoy every bite, as you set the tone of your day. The cooked apples and cinnamon aroma will make your house smell like a fall dream. It’s a whole experience, not just a breakfast…
